Summer is right around the corner and all the fresh vegetables will soon be coming into season! I absolutely love being able to go out into my garden and pick fresh vegetables. There is still a little while before everything is ready, but I do have an abundance of greens. Spinach, romaine and kale are growing quite well and ready to harvest. Snow peas and strawberries will be ready soon.
What do you need if you are going to have a salad with fresh greens, out of your garden or straight from the farmer’s market? You need a delicious salad dressing! With the bright flavours of tomato, red pepper and onion, as well as just a couple more ingredients, you can bring your salad to life.
Tomato Red Pepper Dressing
- 2 medium tomatoes or 1 large
- 1/2 red pepper- seeded
- 1 small onion- white or red (if you want it a little sweeter)
- 1/2 c. raw cashews (optional but they give a nice creaminess)
- 2 Tbsp. apple cider vinegar (or your choice of vinegar)
- 2 Tbsp. olive oil
- 1/2 tsp. sea salt
Put all of the ingredients into a blender or vitamix and blend on high until smooth. Store in a glass jar for up to 1 week in the refrigerator.
