Summer is in full swing! You eat many salads because it’s so warm out and you don’t want to cook. I seriously don’t blame you! The produce this time of year is so delicious! You can eat local, maybe from your own garden and enjoy all of the vibrant flavours!
Since I have a lot of tomatoes,cucumbers and basil, I decided that they would make a lovely combination. To make this a complete meal, just top with cooked beans, beef or chicken.
Tomato Cucumber Salad (Vegan/ Gluten Free)
2 medium tomatoes- chopped
1 cucumber- chopped
6 basil leaves- ripped
2 Tbsp. red onion- diced
2 Tbsp. apple cider vinegar
1 Tbsp. olive oil
2 tsp. mustard powder
sea salt and fresh black pepper to taste
Mix all the ingredients together in a medium size bowl. Let sit at least 10 minutes to let the flavours marry. Enjoy!! Store leftovers in a covered bowl, in the fridge for up to 3 days.
