What a better way to celebrate the warmer weather than with homemade strawberry ice cream I actually make this ice cream at least once a month π … So yummy!!
Strawberry Ice Cream (Dairy Free/ Paleo/ Refined Sugar Free/ Vegan)
2-400 ml cans coconut milk (Place your milk in the fridge overnight)
2 cups. strawberries plus 1/2 c.
1/2 c. Β honey (use maple syrup for vegan)
2 tsp. vanilla
pinch of sea salt
Puree all ingredients in food processor. Then blend mixture in frozen ice cream maker ** for twenty minutes. Just before time is up add an additional 1/2 c. of cup up fruit. Will be consistency of soft ice cream. Β For convenience, I put into small individual containers and freeze. When you want to eat the ice cream, take a container out of the freezer for 10-15 minutes to soften. Why not top your ice cream with Whipped Coconut Cream…
**If you don’t have an ice cream maker put bowl of mixture into the freezer and stir every thirty minutes for a few hours. If you like ice cream, why not try my Strawberry Ice Cream Cake!

What is c. fore? 2 c. strawberry?
The c. is for 2 cups strawberries. I’ll make it more clear on the recipe.
I finally made this. Super yummy! (I used maple syrup though as I didn’t have enough honey on hand).
So glad that you like it!!
Thanks for the invite Parrish π
What should the fat content be for one can of coconut milk???
I usually use between 12% and 17%
Idk why, but it had a funky taste to it.
Your berries may have been going bad. I have sometimes bought frozen berries that didn’t taste right.
Who can resist this delectable vegan ice cream recipe. I hopped by from Healthy Vegan Fridays to see the recipe for myself. I con’t have an ice cream maker so I will try the alternate method. Wish me luck. Pinning and sharing.
Hi Deborah! Don’t worry… I don’t even own an ice cream maker anymore. π
Oh yes! I love ice cream when it’s hot (which it has been!), but my wallet can’t afford to be buying it all the time. This sounds super delicious. Thanks for sharing at Healthy Vegan Fridays. This is being featured this week and I’m pinning this!
Thanks so much Kimmy!
