Sloppy Joe Pasta (Gluten Free/ Dairy Free/ One Pot Meal)

So I don’t know about you, but I have a bad habit of making the same few dishes over and over again. You know what I mean, it’s like ground hog day for dinners. Yes even I do that, even though I create meals. It is crazy how we all get stuck in ruts. So I was thinking of something new, something with one pot. No I don’t like washing multiple pots either. Why not Sloppy Joe Pasta! If you are more traditional, you can try my Simple Sloppy Joes.

Try Something New

We all have far too much to do on a daily basis. Here is a different kind of pasta that only takes one pot to cook.  Traditional sloppy joes meet your favourite pasta dish!  Enjoy!

Sloppy Joe Pasta (Gluten Free/ Dairy Free/ One Pot Meal)

1 lb. ground beef, chicken or turkey

1 medium onion- diced

1 medium sweet pepper- diced (your choice of colour)

1 clove garlic- minced

2 tsp. celery seed

1 Tbsp. dry mustard powder

1/4 c. apple cider vinegar

2 Tbsp. palm sugar (or desired sweetener)

1- 28 0z. can crushed tomatoes

1 c. water

1 1/2 c. dry gluten free pasta (I used True Roots penne)

sea salt and pepper to taste

vegan cheese (optional)

In a large frying pan over medium heat brown meat and drain fat. Add onion and pepper and saute until vegetables are soft. Then add the rest of the ingredients except the vegan cheese. Stir thoroughly. Cover and let simmer for 10-11 minutes or until pasta is cooked through. Top with vegan cheese if desired.

Store remaining pasta in the fridge in a covered container for up to 3 days. Freezes well.
