Start making them again! Try this delicious Shepherd’s Pie!
Shepherd’s Pie (Gluten Free/ Dairy Free)
1 lb. ground beef, chicken, or turkey
1 tsp. olive oil
1 medium onion
2 ribs of celery
2 cloves minced garlic
1 beef bouillon cube ( yeast free for me )
1/4 c. water
1 Tbsp. tapioca starch
sea salt and pepper to taste
1 can cream corn (or different veg)
dairy free mashed potatoes
Brown meat, drain off fat, set aside. Chop onion and celery, saute in oil over medium heat until soft; add garlic and meat.
Add bouillon cube, water and tapioca flour; stir together, let cook five more minutes. Salt and pepper to taste. Put mixture into 9 inch baking dish; top with vegetable, then mashed potatoes.
Bake uncovered at 350 degrees for 30 minutes or until bubbling. I also put it on broil for about five minutes to brown the top a little.
Served with glazed carrots…
Makes six servings… Why not add a loaf of freshly baked Bread or Biscuits.

I like your “What’s your fav comfort food question?”. I’m not gluten or anything-free, but I think it’s good to try different things and give your body a rest from a lot of the artificial-everything we put in. So, when I think of comfort foods I think of the basics…veggie soup (yours is great, btw!), grilled cheese, apple crisp, oven stew, mashed potatoes, chocolate chip cookies…sigh…getting hungry!
