How is your summer going so far? In Ontario we have been going through a heck of a heat wave! Don’t get me wrong, I love the heat compared to winter! I have actually been in our pool quite a bit already. You see, the water needs to be 80 plus for me to get in. It has been 85, so I am in my glory!
With the heat comes cooking concerns. My hubby can’t eat many raw veggies, so salads don’t go over very well. I still need to cook meals, even if it is very hot. I love using my slow cooker in the summer. It is easy to throw your food in, walk away and have dinner ready. The slow cooker also does not heat up your kitchen, as your oven does.
Then there is the instant pot! Yes I have gotten onto the instant pot band wagon. Basically, an instant pot is an electric pressure cooker. Do you remember your mom or grandmother having the pressure cooker on the stove? It used to scare the heck out of me! It would be rocking away as it cooked and you had to be very careful opening it, as it could blow from the pressure. Thankfully, the new electric pressure cookers, do not scare me and they don’t rock or try to jump off the counter. Lol
Remember that you still need to be careful opening it, because it in under pressure. I would highly recommend one! It saves so much time. I use it frequently for ribs, bone broth, beans, soups, stews, chicken pieces. I use it frequently! My second most favourite appliance! Number one still goes to my vitamix!
Instant Pot Melt In Your Mouth Ribs (Gluten Free/ Paleo)
3 lbs. pork or beef ribs (either side or back)
2 Tbsp. gluten free spice mix (I use mine)
3 Tbsp. gluten free bbq sauce (I use mine)
Add 1 cup of water to the bottom of your instant pot. Rub spice all over ribs. Place into instant pot, on top of trivet. Close your IP making sure the pressure value is set to seal. Turn on to manual setting for 15 minutes*. After the 20 minutes, quick release the pressure being careful not to burn yourself. It will take about 10 more minutes until you can open the lid.
You can eat your ribs just like that. Better yet, place them onto the bbq or under the broiler for 3 minutes a side, brushing with bbq sauce. Enjoy!!
*If your ribs are frozen, set the time to 20 minutes.
