High Protein Lentil Pancakes with Apple Maple Topping (Gluten Free/ Vegan/ Dairy Free/ Refined Sugar Free)
Lentil Pancakes
1 c. red lentils
1 c. milk alternative or water (I use my hemp milk)
1 ripe avocado- ripe, without seed or skin
2 tsp. baking powder
1 tsp. vanilla (I use my own)
1/4 tsp. sea salt
1/4 c. mild tasting oil (I use avocado oil)
extra oil for frying
Soak lentils overnight. The next day, drain and rinse lentils putting them into your high powered blender. Add the remaining ingredients. Blend until completely pureed.
Put 1/2 tsp. oil in skillet that is on medium heat. Ladle in approximately 2 tablespoons of pancake batter onto hot skillet.
Cook approximately 3 minutes on first side, then carefully flip over pancake cooking another two minutes. Add more oil as needed.
Serve and enjoy! These pancakes also freeze quite well!
Apple Maple Topping
2 medium sized apples (peeled and diced)
1 Tbsp. coconut oil
1/3 c. maple syrup
Put coconut oil and apples into medium sized skillet on medium heat. Saute for 5 minutes. Add maple syrup. Continue cooking for five more minutes. Use to top pancakes.
