Being Gluten Free
Being gluten free has some disadvantages. You can’t just go to any food truck or restaurant and order whatever you want off the menu. In addition, you can’t go into the grocery store and buy whatever you’d like either. When eating gluten free, you need to plan and read labels, whether it is menu labels or packages labels.
On the other hand, you can take charge of your diet and be in control of what is going into your body. Eating gluten free you can choose far more healthy ingredients to ingest. Take shake and bake chicken coating for example. The prepackaged one is not only full of gluten, but other artificial ingredients.
Just incase you’d like to have your chicken coating ready all the time, you can make it up ahead of time and store it in the freezer for whenever you need it. Also works great on pork chops.
Bulk Shake and Bake Coating
- 2 Tbsp. mustard powder
- 2 Tbsp. dried thyme
- 1 Tbsp. onion powder
- 1 Tbsp. garlic powder
- 1 Tbsp smoked paprika
- 1 1/2 tsp. sea salt
- 1/3 c. almond flour/ meal *
Mix everything together and store in a sealed container in the freezer until use on meat.
Shake and Bake Chicken
- 10 pieces of chicken (I have used breasts, legs, and thighs)
- 2 tsp. mustard powder
- 2 tsp. dried thyme
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- 1/2 tsp. sea salt
- 2 Tbsp. almond flour/meal*
Preheat oven to 400 degrees. Line baking sheet with parchment paper. This is optional, but it does save on cleaning.
Place all the spices and almond flour into a large zip lock bag. I remove the skin from my chicken, but that is up to you. Place chicken into bag and shake until chicken is completely coated. Place chicken onto rack to reach desired crispness. Cook for 40-45 minutes or until chicken is fully cooked with an internal temperature reaching 165 degrees.
*For nut free but still grain free, you can substitute the almond meal for sesame seeds.
