How would you like an icing that is healthy? Have you ever thought about frosting a cake with sweet potatoes?
Would you like your kids to eat more vegetables? Why not try this creamy icing. I have figured out that this icing is a fantastic dip!!
Try it on top of chocolate cake , vanilla cake, or even pumpkin cake for added vegetables…….
Sweet Potato Frosting and Dip(Dairy Free/ Refined Sugar Free/ Vegan/ Paleo)
1 1/2 c. cooked sweet potatoes or yams
2 Tbsp. coconut flour
2 tsp. cinnamon
2 Tbsp. honey (maple syrup for vegan)
1/2 tsp. sea salt
Mash cooked sweet potatoes with mixer or food processor. Add remaining ingredients and mix well.
Makes enough icing for 12 regular size cupcakes.
**If you like chocolate, you could try my Chocolate Sweet Potato Frosting.
You can also use it as a dip!!

Any particular reason for coconut flour, or would any other work too?
I’m not sure if a different flour would work. I know that coconut flour absorbs its weight in liquid and it adds tons of fiber. You can try and let me know 🙂

Yes it’s gluten free. You can get it at health stores as well as some grocery stores 🙂
Can I try this with stevia or pure maple syrup instead of honey???

What a brilliant idea! How does the coconut flour affect the texture? I imagine it to be gritty. What have you found?
I use the coconut flour as a binder, just as I use cocoa in the chocolate sweet potato frosting.
It’s not gritty at all 🙂 Just make sure you put everything through the food processor or blender.
It was good to me b/c I luv sweet potatoes but wouldn’t pass for icing with my kiddos.

I peel and boil the sweet potatoes until soft. The frosting is on top of vanilla cupcakes and there is a link for that recipe on this one 🙂

So glad that you like it! You can add beet powder to that icing to make it more colourful. You may want to add a little less coconut flour. You could also try my Chocolate Sweet Potato Frosting.
