Chicken Souvlaki Stir Fry

Who says that you can only have chicken souvlaki in the summer time on the bbq?
I don’t see why you can’t have that lemony, garlicky flavour any time of the year.
That is why I make this dish.  You can enjoy a little summer any time you’d like. This is also a dish that the whole family can eat and enjoy!

Chicken Souvlaki Stir Fry

2 boneless/skinless chicken breasts- cut into bite size pieces
1 large onion- diced
2 c. red or green pepper- diced
1/4 c. olive oil
1/4 c. lemon juice
3 cloves garlic- minced
2 tsp. basil
1/2 tsp black pepper
1 small zucchini- diced
2 green onions- sliced

1 c. rice

Cook rice according to package instructions.

Meanwhile put olive oil and chicken in a large skillet, on medium heat. Saute until chicken is five minutes, stirring chicken. Add onion and peppers, saute for ten more minutes. Add lemon juice, garlic, basil, black pepper, zucchini and green onions. Saute for five more minutes.

Chicken Souvlaki
Serve over rice. Makes 4 servings.
You can easily change up the vegetables to suit your likes.
