Coming up, we have the Super Bowl on Sunday, then Valentine’s Day on Monday. Both events need food! No matter the gathering big or small, delicious food is the best way to celebrate! This luscious Caramelized Onion White Bean dip is not only packed with flavour, but it’s also packed with protein. So creamy, that those who are eating it, won’t realize or care that it’s completely dairy free and vegan. The flavour of this dip is the perfect pairing for your veggies, crackers and chips!
Caramelized Onion White Bean Dip
- 2 c. cooked and drained white beans- such as navy, romano, or white kidney
- 2 large white onions
- 2 Tbsp. olive oil -divided
- 1 tsp. sea salt- divided
- 1 Tbsp. apple cider vinegar
- 1 tsp. onion powder
Thinly slice your onions and add them, 1 Tbsp. olive oil and 1/2 tsp. sea salt to a medium size skillet and put on very low heat. Cover and let your onions sweat and caramelize; this will take a good 30 minutes. Slow cooking the onions like this makes them deliciously sweet.
When your onions are done, reserve 2 Tbsp. of caramelized onions for a topping. Add the rest of your onions, including the cooking liquid to you food processor or blender with all your other ingredients. Blend until smooth. Pour into a dish and top with reserved onions.
Serve with cut up veggies, crackers or chips. Store remaining dip in the fridge, covered for up to 3 days. This dip freezes well.
