Bacon Wrapped Chicken

Sometimes, you forget old favourites… Some “people” say that bacon is bad and you shouldn’t eat it… Other’s say that bacon is fine…

I’m going with bacon is “Delicious” and eat it in moderation 🙂 I eat it a couple times a week now.

Marinated chicken tastes lovely… Wrap it in bacon and it’s out of this world!

Bacon Wrapped Chicken

8 pieces of skinless chicken
4 cloves garlic- minced
1 tsp. dry basil
1 tsp. thyme
1/4 tsp.  pepper
1/4c. olive oil
1/4 c. lemon juice

8 – 16 slices of bacon.( depending on, if you would like 1 or 2 slices on each piece of chicken)
Mix garlic, basil. thyme, pepper, olive oil, and lemon juice together in a glass bowl large enough to hold the chicken. Add chicken and coat thoroughly. Marinate for at least 2 hours and up to 24 hours.

Preheat oven to 375 degrees. Or heat the bbq to medium heat.

Wrap slice of bacon around each piece of chicken and put a bay leaf** in. Use toothpicks or skewers to keep bacon on chicken.

Arrange chicken on rack.
Cook for 45 minutes or until bacon is crispy and chicken is cooked through. If cooking on the bbq, cook on top rack, because the bacon makes the bbq flame up.

Throw away bay leaf and toothpicks before eating.

** I have also used full fresh basil leaves instead of bay leaves.

  1. I really must try this, I know hubby and I would eat it…. I wonder if I could bread the chicken first then wrap it in bacon…that is the only way Dino would eat it… I;m going to pin this.

    1. You could try breading the chicken first, but the bacon may make the coating a little soggy.
