Turtle Brownies (Gluten free/ Dairy free)

Yes you have all figured out (and I have said it many times), I love chocolate!
The only thing better than chocolate, is chocolate and caramel together!

Having food allergies we all see these wonderful treat is the stores or on TV that we can’t possibly eat, due to our food allergies. Even most of the “gluten free” products out there still have dairy, refined sugar, and nasty fats in them.
Well, I see these foods and say, “How can I make that so I can eat it?”
I really do enjoy the challenge of seeing a picture and creating a yummy treat from it.

Turtle Brownies (Gluten Free/ Dairy free)

Brownie Base:
2 c. gluten free flour mix
1 tsp. xanthan gum
2/3 c. cocoa
1 1/2 c. palm sugar (or desired granular sugar)
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. sea salt

2/3 c. coconut oil
2/3 c. unsweetened apple sauce
1 Tbsp. vanilla
3 eggs

1 1/2 c. chopped pecans or walnuts

Caramel Topping:
3/4 c. palm sugar (or desired granular sugar)
1 Tbsp. tapioca starch

3/4 c. coconut cream (or desired cream)
1/3 c. coconut oil

1 1/2 c. chopped dairy free dark chocolate or chocolate chips

Preheat oven to 350 degrees, line 11″ by 17″ baking sheet with parchment paper.

In a large bowl whisk together  flour mix, xanthan gum, cocoa, sugar, baking powder, baking soda, and salt. Set aside.
In another bowl beat coconut oil, apple sauce, vanilla, and eggs. Add flour mixture and only beat until just mixed.
Spread batter into prepared pan. Spread nuts over the top. Bake for 13 minutes.
While brownie mixture is baking make caramel. In a small pan whisk together sugar and starch, then add in cream and oil. Bring to a boil, whisking continuously. Turn off pan as mixture starts to thicken. Pour over brownie mixture. Return to oven and bake for an additional 10 minutes.
Remove from oven and top with chocolate.

Let cool and cut into squares. These squares are so decadent that you may want to cut them smaller than I do.

Makes 40  approximately 2″ by 2″ squares.
